“Well, maybe for tomorrow ðŸ˜Œ Apple Spice for the fall season or apricot?

“Apple Spice.”

Gluten-Free Spiced Apple Butter Cheesecake





Gluten-Free Spiced Apple Butter Cheesecake 

Crust:
8 Tbs. grass-fed better, melted
14 oz. gluten-free cinnamon brown sugar biscuit cookies, processed into a crumble

 

Preheat the oven to 375 degrees. Pulse together the gluten-free crumbs and melted butter. 

 

Press into the bottom of a parchment lined cheesecake pan (or two smaller lined cheesecake pans).


Bake for about 25 minutes.


Remove from the oven and chill for 30 minutes.

 

Filling:
16 oz. mascarpone cheese, room temperature
16 oz. 
SkiQueen Gjetost cheese, cut into chunks
1/2 cup sugar
2 large eggs
1 cup Bourbon Spiced Apple Butter, divided
1 large apple, thinly sliced
ground cinnamon

 

In a food processor, whir together the mascarpone, gjetost, sugar, eggs, and half the apple butter.


Pour over the cooled crust(s).

 

Bake for another 45 minutes, or so…until set.

 

Chill for several hours.

 

Spread the remaining apple butter on top and then arrange the apple slices and dust with cinnamon.
