Great Green Goodies




Magic – Green Magic!  An amazing chemical reaction occurs between the chlorophyll in sunflower seeds and baking soda when exposed to heat – together.  Perhaps it’s just like the magical reaction that takes place in the heat of a relationship – creating something green and entirely different altogether.

These changes take time, though.  Things are not always what they seem.

As you remove these goodies from the oven, there appears to be nothing special about the recipe – the elements on their own.  Given time, though, and with patience, the magic happens.

24 hours later, a leprechaun green.  48 hours later, a vibrant, rich emerald green!

Great Green Goodies

2 Tbs. flaxmeal, soaked in 4 Tbs. hot water
1/2 c. unsweetened SunButter
6 medium pitted dates
1/2 c. unsweetened applesauce
2 Tbs. raw honey
1 tsp. vanilla extract
1 tsp. apple cider vinegar
1/4 c. coconut flour
1 tsp. ground cinnamon
1 tsp. baking soda
1/4 c. currants or raisins

 

Preheat oven to 350 degrees.  Combine flaxseed and water to make the flax “egg” gel.  Combine the SunButter, dates, and applesauce in a food processor and process until smooth.  Add the flax gel, honey, vanilla, and vinegar and briefly process to combine.  Add coconut flour, cinnamon, and baking soda and process once again, briefly, to thoroughly combine.  Transfer to a large mixing bowl and fold in currants with a spatula.
At this point, the dough will be very sticky.  By the spoonful, drop dough onto parchment-lined baking sheet.  Gently flatten dough drops to form into cookie goodie discs.
Bake for 15 minutes.  Remove from oven and allow to cool.  WAIT…for the green to ensue.
