Meyer Lemon Salt

Meyer Lemon Salt 

1 large Meyer lemon
1 cup kosher salt

 

Peel the lemon, separating the peel from the pith (basically, eliminating the pith). Toss the peels with the salt and store in an airtight container for several weeks to allow the flavors to meld.
