Wilted Spinach Bacon Salad

1 Tbs. butter

2 handfuls spinach

1/4 cup red onion, finely chopped

2 slices bacon, finely chopped

Splash Pernod liqueur (around 2-3 Tbs.)

juice from ½ fresh lemon

salt

pepper

 

Melt the butter in a large skillet over a medium flame. Sauté the onion until translucent and soft, seasoning with salt and pepper. 
Add the bacon and cook until the fat has rendered and the flavors meld. Things will begin to cook down.

 

Add the Pernod. Cook until mostly evaporated.

 

Remove from heat. Squeeze the fresh lemon over the salad and toss. Serve on warm plates.
