Gourmet Italian Grilled Cheese Sandwich







Gourmet Italian Grilled Cheese Sandwich 

3 slices fresh sourdough bread
2 Tbs. butter
4 oz. excellent quality pepperoni slices, thinly cut into strips
5 oz. cracked pepper Boursin cheese
3 giant basil leaves, chopped

 

Preheat a cast iron skillet to medium-low. 

Add the pepperoni slices and cook until the fat begins to render. Stir in the cheese. Cook until well combined.

 Set aside.


Meanwhile, butter one side of two slices of the bread liberally.


Place one slice, buttered side down in the hot cast iron skillet. 

Top with 1/2 the pepperoni cheese mixture, and 1/2 the fresh basil.

Cover with the non-buttered slice of bread. Top that bread with the remaining cheese and basil, as well as the last slice of bread, buttered side up.


Cook until crispy brown. 

Flip. 

Cook again until the side facing down is crispy brown.

 

Slice and serve immediately.
