Vegan Cashew Ginger Slaw

Cashew Mayo:
1 cup cashews, soaked 1-4 hours
1 large lemon, peeled, sliced, and seeded
1/4 tsp. + ginger sea salt
2 Tbs. apple cider vinegar
1/4 – 1/2 cup water, as needed to blend

 

In a small blender or immersion blender with a cup, blend all ingredients until smooth and creamy.

 

Slaw:
3 cups finely shredded cabbage
1/2 cup chopped cilantro

Ginger sea salt

 

Toss together the slaw with the desired amount of mayo. 

Top with chopped cilantro and ginger salt.

 

Yes, it’s that easy.
