Eggs For a Crowd




Growing up my folks were big entertainers. Well, actually they still are. They know how to throw a party – host guests, and just make people feel welcome. 

Many an evening our house was full of guests for some gourmet dinner and drinks. I was a lucky girl.
And, often the crowd would spill over to the morning.
And, what do you do for your friends after feeding them a delectable dinner?
You feed them breakfast, of course!

With no rhyme or reason behind this recipe, it works.
Eggs. Cheese. Herbs. Goodness gracious – it’s a no-brainer and a crowd-pleaser!

Eggs For a Crowd

1 pkg frozen phyllo dough, thawed
4 Tbs. butter, melted
10 large eggs
16 oz. cottage cheese
1 bunch fresh scallions, chopped
2 Tbs. fresh dill, chopped
sea salt and pepper

 

Preheat the oven to 375 degrees.


In a large 9″x13″ baking dish, layer the phyllo dough, brushing each layer with butter before stacking on another layer (more or less). 

 

In a separate bowl, whisk together the remaining ingredients. 

 

Pour over the phyllo crust and bake for about 35-40 minutes, until set.

 

Top with fresh herbs before slicing. (Cooling a bit is best to allow the eggs to set).

 

Maybe it’s just you – maybe it’s two – maybe it’s a crowd. In any situation, these eggs are FOR YOU.
