Cashew Blueberry Superfood No-Bake Cookies (Vegan, Gluten-Free)

 


We all crave little morsels of sweetness from time to time (or all the time in many a case).
Just a gem, a bite, a bit …


And, while dark chocolate will fit the bill in the majority of situations, sometimes we all want something a little more super – protein-packed, fiber-packed, health-packed, but also flavor-packed.

 

And, for those who are vegan, gluten-free, and “raw,” or Paleo, Keto…you name it, Cashew Blueberry Superfood No-Bake Cookies (filled with chia seeds too) will make all the difference in our day (or even in our moment).

 



Cashew Blueberry Superfood No-Bake Cookies (Vegan, Gluten-Free)

 

8 Tbs. vegan butter, room temperature
1 1/2 cups Kalot Superfood Cashew Butter with Blueberries, Vanilla, & Chia
2 1/2 cups powdered sugar
1 tsp. vanilla extract
1/2 tsp. sea salt

 

Combine all the ingredients in the large bowl of a stand mixer.


Mix well.


Chill for several hours.

 

Form into 1″ sized balls.


Flatten with the back of a glass and transfer to the fridge or freezer for storage.
