Cinnamon Raisin Pecan Shortbread




I could definitely consume cinnamon on a daily basis.

Not only is it considered a superfood, but it’s also amazing tasting. Simply cinnamon: YUM!

 

Not only do we all need more cinnamon in our lives, but we also all could use the flavors of fall. After all, it’s now that time of year.

 

Finally, there is no one on earth who does not love or need some darn good shortbread in their life. Right?



Cinnamon Raisin Pecan Shortbread 

1 lb. butter, melted and cooled
4 cups all-purpose flour
2 cups powdered sugar
1 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. vanilla extract
1/2 tsp. sea salt
1 1/2 cups raisins
1 1/2 cups chopped pecans

1/2 cinnamon sugar mix

 

Once the melted butter has cooled, fold in the flour, powdered sugar, cinnamon, baking soda, vanilla, and salt. 

 

Mix well. 

 

Next, fold in the raisins and pecans.

 

Divide the dough in half and wrap each half tightly in plastic wrap, forming into a roll, and chill overnight.

 

Preheat the oven to 325 degrees.

 

Unwrap each dough roll and cover in the cinnamon sugar mix.

 

Slice into 1/4″ rounds and space out on parchment-lined baking sheets.

 

Bake for about 15 minutes, until golden brown and fragrant.

 

Cool for 10-15 minutes before eating or transferring to a serving dish.
