Vegan Queso Tower



Elegant, exquisite, and excellent flavor, this vegan rice, cheese, and guacamole stack with toasted pumpkin seeds is amazing.

Vegan Queso Tower

1 cup cooked white rice, warm
1 cup vegan cream cheese, softened to room temperature
1/2 cup roasted corn
1 jalapeño pepper, seeded and chopped
1/4 tsp. sea salt
1/4 tsp. black pepper

1 large avocado, super soft
1 medium tomato, coarsely chopped
1/4 red onion, chopped
2 Tbs. fresh cilantro, chopped
1 Tbs. fresh lime juice
1/2 tsp. sea salt

2 Tbs. toasted pumpkin seeds


Mix together the warm rice and cheese.

 

Form into biscuit rounds (lined with plastic wrap makes the release easier).

 

Chill until well-formed.

 

Meanwhile, toss together the corn, pepper, salt and pepper, avocado, tomato, onion, cilantro, and lime juice to form a salsa.

 

Stack the rice mounds and salsa to your pleasing.


Garnish with pumpkin seeds, salt, and additional cilantro.
