Beef Meatballs Broccoli & Creamy Aioli




Satisfying and salubrious meatballs paired with broccoli and a lovely creamy spicy, Dijon aioli make a delicious gluten-free and allergy-friendly healthy dinner! 




Beef Meatballs Broccoli & Creamy Aioli

 

Meatballs:
10 oz. lean beef
2 Tbs. coconut flour
1 large egg
sea salt and pepper
1/2 tsp. paprika
1/4 tsp. garlic powder
1/4 tsp. parsley powder

 

Mix all ingredients together and form into 1″ balls. Set aside.

 

Broccoli:
2 tsp. olive oil
1 medium red onion, thinly sliced
1 head broccoli, broken into florets
sea salt and pepper

 

In a large Dutch oven, heat the oil to medium heat. Add the onions and sea salt and pepper and cook until slightly soft.


Add the prepped meatballs and broccoli. 

 

Cover and cook 3-5 minutes. Stir, cover, and continue to cook, stirring occasionally, until the meat is cooked through.


Reduce the heat to low and stir in the Spicy Aioli.

 

Spicy Aioli:
3/4 cup mayonnaise 
1 garlic clove
1 Tbs. lemon juice
1 tsp. Dijon mustard
1/2 tsp. cayenne pepper

 

Whir together all ingredients until creamy and smooth.

 

Serve plated and topped with additional salt and pepper, if desired. 

 

We served ours over rice!

 

Garnish with chopped, roasted red bell pepper, if desired
