Vegan Creamy Gnocchi Kimchi Kraut



I love kraut!!

The fermentation, the stink, and the belly goodness are all amazing!


The fragrance? Well, that’s another topic.


But, I do love everything about sauerkraut, truly.

 

And Wildbrine fills the kraut void in my life in many, many ways.

So many flavors and so much magic in their products – yes.

 

Today: Vegan Creamy Gnocchi Korean Kimchi

Your gut tells you it’s good for your gut! You can’t go wrong with this one! ðŸ˜Š

 


Vegan Creamy Gnocchi Kimchi Kraut

2 cups homemade gnocchi (gluten-free, if desired)
8 oz. Wildcreamery Cream Cheese Alternative (Wildbrine Plant-Based Cream Cheese)
sea salt and pepper
3/4 cup Wildbrine Korean Kimchi
1/4 cup macadamia nuts, chopped

Bring a large pot of water to a rolling boil.


Add the homemade gnocchi and cook for 3-5 minutes, until the dumplings float.


Drain.


Return to the pot and add the vegan cream cheese.


Season with salt and pepper.


Heat on low and stir until smooth and creamy.

 

Serve topped with Wildbrine Korean Kimchi and chopped nuts.
