It’s easy. It tastes more than great – the depth of flavor and aroma is like no-other. And, today, in our “good, clean, fun” experiment, we are using THE FILIPINO SPICE GRILL RUB for our sautéed and grilled marinated flank steak and plantains. (It doesn’t get any better than this, folks).

 

Wowza! This stuff is good. good. gooooood.


It’s earthy, sweet, savory, spicy, salty, umami – all at once.

 

I feel so blessed to have been able to relish in this recipe of perfectly cooked and tender beef, the flavors of Serious Foodie, and a tropical flair to the food, just as the warmer seasons are ending. YUM! You’ll love this. You won’t be sorry.

Filipino Citrus Flatiron Steak & Plantains 

lbs. all-natural, grass-fed flat iron steak
3 Tbs. The Filipino Grill Serious Foodie Spice Rub
1/4 cup extra virgin olive oil
1/2 red bell pepper, seeded and diced
1 small shallot, peeled, and minced

2 large ripe plantains, peeled and chopped
sea salt and pepper
3 slices navel orange
1 tsp. olive oil

 

Combine the steak, spice rub, olive oil, shallots, and bell pepper in a large Ziplock bag. 

 

Rub the steaks well with the seasoning and oil. REALLY immerse and ensure a fantastic flavor transfer among all elements. Place in the fridge for 24-48 hours.

 

Preheat a grill to very high heat, adding a large cast iron skillet atop to heat.

 

After about 10 minutes of full-strength heat, add the marinated meat, oil, and veggies to the hot skillet.

 

Stir and cook, covered, for several minutes.

 

While the meat is searing. Combine the sliced plantains, salt and pepper, orange slices, and oil, in a medium bowl.

 

After tossing and stirring the meat and veggies just right for several minutes (still rare, but perfectly crisp on the outside), transfer the meat to a serving plate.

 

Using the same hot, cast-iron skillet on the grill, add the marinated plantains (reserving the sautéing veggies) and cook and stir until soft and complex. Cover every once in a while, for a few minutes, before stirring again. (You want the flavors of the meat rub to transfer to the plantains).

 

Once the fruit/starch is soft, return to a serving bowl.

 

Plate with the sautéed plantains and veggies alongside the Filipino Citrus Flatiron Steak.
