Chicken Cheddar Chip Taco Bowl




Let’s face it, you’re not a taco. You can’t make everyone happy.

Well, I’ll try – simply by serving tacos!

 

Chicken Cheddar Chip Taco “Bowls” tonight.

 

Sometimes it’s just easier to deconstruct the messy little envelope we all adore and eat it with lots and LOTS of cheddar cheese! ðŸ˜‹ðŸ§€ðŸŒ®ðŸ“£ðŸŽŠðŸ˜‹




Chicken Cheddar Chip Taco Bowl 

1 tsp. olive oil
1 lb. ground chicken
3 Tbs. Taco Seasoning
1/4 cup medium (or hot) salsa
1 1/2 cup tostadas (fried or baked, flat corn tortillas) or taco shells, broken into pieces
1 cup white rice, cooked
juice and zest of 1 fresh lime
fresh cilantro
2 cups shredded cheddar cheese

 

In a medium skillet, heat the oil over low heat. 

 

Add the ground chicken and break apart with the back of a spatula. 

 

Once the chicken juices begin to flow, increase the heat to medium.

 

Add the Taco Seasoning and salsa, stirring well. 


Cover and cook until the chicken is cooked all the way through, continuing to stir every so often.

 

Toss the cooked taco chicken with corn chips, rice, fresh lime juice, and zest, and shredded cheese. 

 

Top with fresh cilantro and additional salsa, if desired.
