Cosmopolitan Chicken Chili Chapatis



Cosmopolitan indicates international sensations, inclusive of people, parts, and places from all over the world.


It’s sexy. It’s sleek. It’s “woke,” and it’s delicious when used in a format of an amalgamation of flavors from all the nooks and crannies of the earth.

 

These Cosmopolitan Chicken Chili Chapatis encompass the Mexican fajita chili seasonings of South American and a Tex-Mex flair, as well as a hint of Mediterranean influence with Greek feta and parsley, all wrapped inside a soft, chewy warm, and fresh Indian Chapati.

 

Oh my, could the cosmos create a cuisine anymore creative and culturally satisfying?


Maybe, but not today.



Cosmopolitan Chicken Chili Chapatis 

1 Tbs. olive oil
1 lb. ground chicken
*Fajita Seasoning
1 small white onion, finely chopped (diced)
1 green bell pepper, seeded and diced
1 red Serrano chili pepper, seeded and diced
juice of 1/2 fresh lime

1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
4 large chapati breads, warmed

 

*Fajita Seasoning:
2 tsp. chili powder
2 tsp. ground cumin
1 tsp. garlic powder
1/2 tsp. paprika
1/2 tsp. oregano
1/2 tsp. sea salt
1/4 tsp. ground black pepper


Combine all spices together and mix well.

 

Heat the oil in a large skillet over medium heat. 

 

Add the ground chicken and Fajita Seasoning, coating all sides of the chicken with the oil and spices. 

 

Cover, stirring occasionally, and break the ground pieces apart with the back of a wooden spoon.

Stir in the onion, bell pepper, and chili, cooking (covered) until the veggies are soft. 

 

Stir in the fresh lime juice.

 

Once everything is cooked and fragrant, divide the chicken mixture into quarters. 

 

Fill each chapati with 1/4 of the mixture, top with 1/4 of the crumbled feta, and 1/4 of the parsley. 

 

Add additional ground black pepper, if desired.
