White Chocolate Chip Chocolate Chai Cookies
I dream and drool at the spicy aroma of chai tea.
Cinnamon, cardamom, ginger, cloves, allspice, nutmeg…
So good. SO GOOD!
My mouth is watering.
(And these are cookies I’m eventually describing, come on – with both chocolate and white chocolate chips!)
My hubby, on the other hand, simply does not care for “the taste of Christmas.”
He scoffs at the smell and the taste of cinnamon spice.
I can’t bring myself to understand or comprehend this unbelievable mystery of a human. How is it possible NOT to LOVE this flavor?
Well, we move on. I love him anyway and accept him for all that he is – clove and ginger scoffing aside 😉.
But, on this particular day in my baking kitchen, I ran short on time and needed Mr. B. to remove the last batch of cookies from the oven. I was out the door just a few moments too soon.
I set an alarm and asked for him to remove the sweets just when the time was right.
Once I arrived at my destination safely, I texted him, just to make sure the deed had been done – and all things were good.
White Chocolate Chip Chocolate Chai Cookies
1 cup shortening or butter, room temperature
14 oz. sweetened condensed milk
1 1/4 cup Pi Chai Chocolate Black Tea Latte Mix (OR, 1 cup chai latte powdered mix + 1/4 cup unsweetened cocoa powder)
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. sea salt
2 cups all-purpose flour
10 oz. white chocolate chips
Preheat oven to 350 degrees.
Beat together the butter/shortening, sweetened condensed milk, chai latte mix, baking soda, baking powder, and sea salt until smooth.
Add the flour and mix until well combined.
Fold in the white chocolate.
Allow the dough to “rest” for 10 minutes.
Scoop 1″ sized balls of dough on parchment-lined cookie sheets. Flatten with fingers or palms.
Bake for 12-14 minutes, until just beginning to brown.
Remove from the oven and cool for 15 minutes.
