Flaky Cinnamon Sugar Biscuits with Pecans & Sage
It may be pumpkin spice season, but it’s always cinnamon sugar season in my book.
And, for most people, biscuits are welcome any day of the year.
With a hint of dried sage and diced pecans, all dusted with cinnamon sugar, these flaky, buttery, and slightly sweet biscuits will truly warm your heart as you enjoy the brisk, fall air around you! 🍂🍁
Flaky Cinnamon Sugar Biscuits with Pecans & Sage
4 cups all-purpose flour
2-3 Tbs. sugar
2 tsp. baking soda
2 tsp. baking powder
1 tsp. ground cinnamon
1 cup (2 sticks) butter, chopped into 1/4″ pieces, ice cold
1 cup heavy cream + 1 Tbs. apple cider vinegar, very cold
flour for handing
1 large egg, beaten
cinnamon sugar
1/4 cup pecans, finely chopped
2 tsp. dried sage
In the bowl of a food processor, combine the flour, sugar, baking soda, baking powder, and cinnamon.
Pulse until mixed.
Add the cold butter. Pulse until beady.
Drizzle in the cold cream while pulsing the dough (just a little prestidigitation involved here 🪄😉).
Transfer to a flour dusted parchment lined surface.
Using floured hands and a floured rolling pin, roll the dough into a rectangle.
Fold into thirds.
Roll into a rectangle again.
Fold into thirds.
Roll into a rectangle again.

Roll into a rectangle again.
Repeat one more time (this makes things gorgeously flaky).
Using a biscuit cutter, cut the dough into rounds, about 1 1/2″-2″ thick.
Roll out the remaining dough and continue cutting until all the dough is used.
Transfer the cut dough rounds to a parchment lined baking sheet.
Chill in the freezer for 15 minutes.
Preheat the oven to 360 degrees.
Brush the chilled dough rounds with egg wash.
Sprinkle with cinnamon sugar, chopped pecans, and dried sage.
Bake for 20-25 minutes, until puffy and golden brown.
Remove from the oven and cool until easy enough to handle.
