French Avocado French Toast Grilled Cheese Sandwich
While we, here in America, envision guacamole to be something spicy, tangy, and ready for a chip dip, the flavor profile is much different in France. Of course, it is – AND, in my humble opinion, it’s so much better. (OF COURSE IT IS – everything French is better 😂🤣😂🤣😂🤣😂).
Think tangy lemon and aromatic tarragon, paired with creamy, silky, rich avocado.
THEN, with all that goodness in mind, imagine a “French Toast” grilled cheese sandwich, with just enough gruyere cheese and additional lemon zest, prepared with sweet French brioche bread, to absolutely blow your mind.
Yep. Now, I’ve got you.
French Avocado French Toast Grilled Cheese Sandwich
4 Tbs. butter, room temperature
4 slices (thick) brioche bread
1 large avocado, super ripe
3 oz. gruyere cheese, grated
juice and zest of 1 fresh lemon, divided
2 Tbs. fresh tarragon, minced
sea salt and pepper
3 large eggs
1 Tbs. heavy whipping cream
Heat a cast iron skillet to high heat.
Slather one side of each slice of bread with butter.
In a wide bowl, whisk together the eggs, half the lemon juice and zest, cream, and salt and pepper.
In another bowl, smash the avocado with the remaining lemon juice and zest, sea salt and pepper, and most of the fresh tarragon.
Dip and soak each slice of bread in the egg mixture, flipping to coat each side.
Pan-fry each slice in the heated skillet, flipping once each side is “done.”
Remove from skillet.
Next, reduce heat to low, return the slices to the skillet and top each “French Toast” fried slice of brioche with grated cheese.
Top two of the four pieces with the French guacamole avocado mash.
The two remaining slices absent of avocado should be overturned (cheese side down) to top the avocado – creating two sandwiches.
Allow the cheese to melt.
Flip each sammy and cook until super crispy.
Transfer to serving plates.
Slice diagonally and garnish with freshly chopped tarragon.
