Gluten-Free Savory Seeded Granola Bars

This recipe makes enough for an army (an ARMY OF ONE! 🏆, in my case. I go to town on this type of food!)



Break the bars apart and serve in a bowl, drizzled with your favorite nut milk, serve over a salad, or just nosh by the handful. Maybe even over vanilla ice cream? OMG – I’m headed to try that option right now! YUM!

Gluten-Free Savory Seeded Granola Bars

 

1 cup Kerrygold butter, melted
1 cup Manuka honey
1 cup toasted pepita seeds (pumpkin seeds)
1 cup toasted sunflower seeds
1 cup toasted hazelnuts, chopped
1 cup toasted pecans, chopped
1 cup toasted pistachios, chopped (or not, for courser textured bar)
1 cup raisins
1/4 cup sesame seeds
1/4 cup poppy seeds
2 cups Parmesan cheese, grated
2 cups gluten-free whole rolled oats

 

Preheat oven to 400 degrees.

 

In a giant bowl, combine all the nuts and seeds and stir well.

 

Melt the butter over low heat and stir in the honey. 

 

Once smooth, pour over the nut and seed mixture and coat all surfaces well.


Next, stir in the raisins, sesame seeds, and poppy seeds.


Combine well.

 

Finally, fold in the Parmesan cheese and oats, continuing to mix well and covering all surfaces with butter and honey (add more if things feel too dry).

 

Line 2 large baking pans with parchment paper.

 

Press the mixture into the pans and bake at 400 degrees until beginning to brown and super deliciously fragrant.

 

Remove from the oven and allow to sit, set, and cool before slicing or breaking apart.

 

Seriously, this savory granola is for anyone and everyone and can be served in any and every way.
