PACHA Pomegranate Grilled Cheese

  



Now THAT’S a grilled cheese sandwich.

 

Brian teases me, “When you do something, you f*cking DO it!”

 

He’s not wrong. Do you want a sandwich? I’ll show you the best damn sandwich you’ve ever had!

Thus, the PACHA Pomegranate Grilled Cheese Sandwich.

 

LIVE PACHA Buckwheat Sourdough Bread – organic, gluten-free bread that’s good for you (and good for the planet) – sharp, white cheddar cheese slices, fresh and juicy pomegranate seeds, and a touch of fresh dill and black pepper make THE BEST grilled cheese upon which you’ll ever feast or imagine.



 

PACHA Pomegranate Grilled Cheese

 

3 slices LIVE Pacha Sourdough Buckwheat Bread (yes, THREE – this is a f*!king SAMMICH!!!)
1-2 Tbs. Kerrygold butter, room temperature
4 oz. sharp white cheddar cheese, thinly sliced
1/4 cup fresh pomegranate seeds
2 tsp. fresh dill weed
1 tsp. freshly ground pepper

 

Slather the butter over each slice of bread. IF you’re really up for something decadent, double the butter – double the trouble AND the flavor, and slather both sides of each slice of bread with butter ðŸ˜‹!!!

 

Place one slice of bread (butter side down) in a hot, cast iron (or any) skillet.

 

Top with 1/2 the cheese slices. 


Sprinkle with 1/3 of the pomegranate seeds.


Sprinkle with fresh pepper and a touch of dill.


Layer one more slice of buttered bread and repeat the above process to finish with the final slice of bread.


Fry until the bottom slice is crispy and brown. 

 

Cover with foil and PRESS down with a heavy weight (I used a heavy cast iron Dutch oven) to flatten.


Flip the sammy and toast the last side (still pushing down with weight to flatten).

Transfer to a serving plate.


Slice and garnish with additional pomegranate seeds, dill, and pepper.

 

Best damn SAMMY – EVER!
