Mary’s Mexican Pizza

This is my THEME SONG.


Yes, that’s me.

 

And I just may be a little bit “…crispy and crunchy.”

 

Mary’s have a distinctive taste and texture. I like it.


It may be acquired (according to some in my circle), but I find it to be absolutely fabulous.


And, baked into a homemade pizza crust, topped with all the fixings of a Mexican pizza, we’ve got an outrageously delicious meal!





Mary’s Mexican Pizza 

6 oz. Mary’s Gone Crackers Original (almost 1 pkg), processed into a fine powder
4 oz. butter, room temperature
1 1/2 cup warm water
1 1/4 tsp. quick active yeast
2 tsp. sugar
1/4 tsp. sea salt
1 1/4 cup all-purpose flour (or gluten-free flour)

6 oz. Mexican blend shredded cheese, divided
8 oz. cream cheese, room temperature
3 oz. shredded chicken breast, cooked (optional for vegetarians)
4 oz. Ro-Tel diced green chiles and tomatoes, drained
fresh cilantro
freshly ground pepper
