Raisin Bran Breakfast Bread
One of my all-time favorite things in life is a BRAN muffin.
Yes, I know that sounds strange, but I am constantly CRAVING4MORE when it comes to bran muffins.
They are sweet, they are dense, they are hearty, and they are surprisingly sweet.
JUST LIKE ME!!! 😉
In any case, to satisfy my craving this time, I chose to be utilitarian.
I used some on-hand Raisin Bran cereal – processed into a powder – added a few eggs, a touch of sugar and salt, baking powder and flour – and a hint of Kerrygold butter – and SHAZAM!!!! Amazing …
Raisin Bran Breakfast Bread
Do your best not to eat the entire loaf in one sitting! 😋
Raisin Bran Breakfast Bread
5 cups Raisin Bran cereal, processed into a fine crumb
8 Tbs. butter, room temperature (or even melted)
3/4 cup brown sugar, loosely packed
3 large eggs
1 tsp. vanilla extract
1 tsp. baking powder
1/4 tsp. sea salt
2 cups all-purpose flour
Preheat the oven to 350 degrees.
Using a hand or stand mixer, mix together the raisin bran cereal crumbs, softened butter, sugar, eggs, vanilla, baking powder, and sea salt until smooth.
Fold in the flour, 1/2 cup at a time.
Line a small bread pan with parchment paper.
Transfer the sticky dough to the prepared bread pan.
Bake for 45-50 minutes, until a toothpick inserted comes out clean.
Cool before slicing and serving! 😋
