Hot Fudge Chocolate Brownies

Delicious homemade fudge sauce is the core of these homemade chocolate brownies, garnished with floral fondant and golden sugar.


Hot Fudge Chocolate Brownies

1/2 cup butter, melted and hot

1 Tbs. light olive oil

1 1/8 cups sugar

2 large eggs

2 tsp. pure vanilla extract
1 cup homemade chocolate Fudge Sauce*

1 cup all-purpose (or plain) flour

3/4 cup unsweetened cocoa powder

1/4 tsp. sea salt

 

Preheat oven to 350 degrees.

 

Lightly grease an 8-inch square baking pan with cooking oil spray. Line with parchment paper and set aside.

 

Combine hot melted butter, oil, and sugar together in a medium-sized bowl. Whisk well for about a minute. Add the eggs and vanilla. Beat until light in color, about one minute.

 

Sift in flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined. Do NOT overmix.

 

Pour batter into the prepared pan, smoothing the top out evenly. 

 

Bake for 45-50 minutes, or until the center no longer jiggles and is just set to the touch.

 

Remove and allow to cool to room temperature before slicing and topping with fondant flowers and magical golden sugar.

 

*Fudge Sauce:
1 ounce 72% chocolate, chopped
2 tablespoons cocoa powder
1/8 teaspoon kosher salt
1/4 cup glucose
2 tablespoons sugar
1/4 cup heavy cream

 

Combine the chocolate, cocoa powder, and salt in a medium bowl.

 

Combine the glucose, sugar, and heavy cream in a heavy-bottomed saucepan, and stir intermittently while bringing it to a boil over high heat. The moment it boils, pour it into the bowl holding the chocolate. Let sit for 1 full minute.

 

Slowly, slowly begin to whisk the mixture. Then continue, increasingly the vigor of your whisking every 30 seconds, until the mixture is glossy and silky smooth. This will take 2 to 4 minutes, depending on your speed and strength. You can use this sauce at this point, or store it in an airtight container in the fridge for up to 2 weeks; do not freeze.
