Chocolate Rosemary Salted Caramel Vanilla Peach Tart

 

Chocolate Rosemary Crust:
2 sleeves chocolate graham crackers
1 cup butter, melted
2 Tbs. fresh rosemary

Salted Caramel Layer:
1 cup Homemade Sea Salted Caramel

 

Filling:
1 cup cream cheese
1 cup Homemade Peach Preserves
2 Tbs. powdered sugar
2 tsp. vanilla extract

 

Garnish:
1 fresh peach, thinly sliced and formed into a large rosette
1 sprig candied rosemary (rosemary simmered in simple syrup, dried, and sprinkled with coarse sugar)

 

Preheat oven to 400 degrees.

 

In the bowl of a large food processor, whir the chocolate grahams into a fine crumb. 

 

Drizzle in the melted butter and rosemary sprigs, processing until well combined.

 

Press into a parchment-lined quick-release tart pan.

 

Bake the crust for 10-12 minutes, until fragrant.

 

Remove from oven and cool for several minutes.

 

Evenly spread the Homemade Salted Caramel Sauce over the cooled crust.

 

Chill for several hours.

 

Next, in the food processor, whir together the cream cheese, peach preserves, powdered sugar, and vanilla, until smooth.

 

Pour over the chilled salted caramel layer.

 

Chill again until set.

 

Garnish with a thinly sliced peach rosette and sugared rosemary.
