Tomato Green Chile Soup & Grilled Cheese Sammy



 

Sometimes you want to craft and cater to a crowd.


And sometimes you simply want to serve yourself.


A piping hot bowl of spicy tomato soup and a toasty grilled cheese sandwich is just the solution for eating in solitude.


It serves so many salubrious purposes: nourishing the body, warming the heart, and soothing the soul: grilled cheese and tomato soup – there’s something special about that which we ALL love. ALL of us. It heals us: Tomato Green Chile Soup & Grilled Cheese Sandwich.

 




Tomato Green Chile Soup & Grilled Cheese Sammy

Serves ONE

 

Soup:
14 oz. can crushed tomatoes
4 oz. can Hatch green chiles
2 tsp. extra virgin olive oil
1/4 tsp. ground cardamom
plenty of sea salt and pepper
2 Tbs. fresh cream
1 handful of fresh arugula

 

Sandwich:
3 slices fresh sourdough bread
2 Tbs. butter
4 slices pepper jack cheese

freshly ground pepper

 

For the soup, add the tomatoes, chiles, oil, and spices to a high-speed blender. 

 

Purée until smooth.

 

Transfer to a small pot and heat to a simmer.

 

Then, transfer to a serving bowl and swirl in the cream, garnish with arugula, and additional salt and pepper, if desired.

For the sammy, spread the butter on both sides of the three slices of bread. 
In a large skillet, place one slice of bread in the center. Top with two slices of cheese, and then another piece of buttered bread. Sprinkle with black pepper. Repeat. Top with the last slice of bread.
Cook and “grill” until golden brown on the side that is down. Flip and cook/grill again until the second side is toasty brown and the cheese is gooey.

Serve nice and hot, alongside the bowl of soup!
