Chocolate Cherry Berry Shortbread
As I was watching a Netflix (well, bingeing a Netflix show recently – YES, for SHAME! I DO watch TV and I can’t even remember the show), I found my mind wandering and dreaming of the days of Ted Lasso, but also the biscuits…and just shortbread, in general.
Buttery, sweet, salty, and simply supreme.
I remembered stowing away a bag of both chocolate-covered cherries and strawberries in the cupboard.
I also reminded myself of two friends in particular whom I’d be seeing this coming week, and who have also grown to expect a sweet treat upon visitation. Thus, it became the PERFECT opportunity to whip up a batch of perfectly pined for shortbread:

I just can’t help myself when it comes to shortbread. It’s my weakness (along with peanut butter and chocolate). Lord, help me.
Chocolate Cherry Berry Shortbread
1 cup salted butter (Kerrygold is the best), melted and slightly cooled
2 cups all-purpose flour
1 cup powdered sugar
1 tsp. vanilla extract
1/2 tsp. baking soda
1/4 tsp. sea salt
1 cup chocolate-covered dehydrated strawberries
1 cup chocolate-covered dehydrated cherries
Mix the melted butter together with the flour, sugar, vanilla, baking soda, and sea salt until a nice dough ball forms.
Fold in the chocolate-covered cherries and berries
Press into a parchment-lined square baking dish.
Flatten and chill for several hours.
Preheat the oven to 325 degrees.
Once ready to bake, place the chilled dough in the oven for 20 minutes or so, until golden brown.
Remove from the oven and cool completely (several hours) before slicing into decadent, buttery chocolate-cherry-berry squares of delight!
