Beyond Grilled Cheese
Other than chicken noodle soup, isn’t the perfect grilled cheese the absolute comfort food?
I think so.
And, with a magical cup of tomato basil soup (or even just Campbell’s), there’s just something about grilled or toasted bread, sandwiching melted cheese that makes my heart zing.
So many fond memories – the reminiscence and the food fare nourish my heart and soul and simply make me feel good.
In all honesty, my favorite pairing with tomato soup is a toasted sammy of thick, hearty, rustic wheat bread, hot and melting multiple slabs of Swiss gruyere cheese in between. YUMMO! 😋
But this grilled cheese sandwich is something even more special. It’s beyond grilled cheese.
It’s ULTRA. ÃœBER. EXTRA.
Well, it’s Beyond Grilled Cheese.
Made with slices of homemade Everything Bagel Bread, a “secret sauce” of Parmesan butter, mascarpone cheese, red pepper jelly, prosciutto, and fresh basil, this sammy is more like a dream than anything else.
Give it a try.
Your tastebuds will go wild.
Beyond Grilled Cheese
2-3 THICK slabs/slices of homemade Everything Bagel Bread
2 Tbs. butter, softened to room temperature
2 Tbs. Parmesan cheese, grated
2 tsp. Everything Bagel Seasoning
1/4 cup mascarpone cheese, room temperature
3 Tbs. spicy red pepper jelly (sweet and spicy, actually)
3 oz. thinly sliced prosciutto
fresh kale, optional
In a bowl, mash together the softened butter and parmesan cheese with the Everything Bagel Seasoning.
Mix well.
Spread this mixture over both sides of the sliced, seeded Everything Bagel Bread.
Heat a cast iron pan or skillet to very hot.
Assemble the sandwich by slathering the mascarpone over one side of each slice, topped with the jelly, prosciutto, and basil.
Fold together and close like a book (or sandwich 😂🤣😂🤣😂🤣😂 – whether you choose two or three slabs of bread).
Add to the hot skillet and cook until browned on one side, squishing down with a heavy-handed spatula or heavy pot, to flatten.
Flip and repeat the cooking and flattening process.
Remove from heat and let this precious, Beyond Grilled Cheese, über sandwich rest for just a few minutes before slicing and serving – piping hot and meltingly amazing.
If desired, sauté fresh kale in the leftover fond from the pan and top with additional Parmesan and seasonings.
This will absolutely blow your mind 🤯!
